Today we decided to prepare three easy and tasty recipes for gluten-free pancakes. You have the opportunity to try different variations of recipes for this popular sweet treat, whether classic gluten-free pancakes, gluten-free yeast-free pancakes or naturally gluten-free pancakes without flour. But we believe you will like them all.

Gluten-free, flour-free or lactose-free pancakes? Fruity, tasty, in X number of ways, but mainly according to taste. We also have a quick and easy version with two ingredients and one is a banana.

Make sure all ingredients are truly gluten-free before you start making this (and any other gluten-free) recipe.

Also, make sure that the work tools you will be using for cooking/baking are clean. Especially the skillets, cutting boards, and pans you are cooking on. If they were previously used to prepare regular food, they may be contaminated with gluten!

Recipe for tasty gluten-free pancakes

To prepare gluten-free pancakes, we will need the following ingredients:

  • 240 g of gluten-free flour
  • 300 ml of milk
  • half a cube of yeast
  • 50 g of icing sugar
  • 2 eggs
  • pinch of salt
  • oil

To start, prepare the starter in the traditional way: crumble half a cube of yeast into the warm milk and add the icing sugar.

Mix the mixture thoroughly with a mixer.
Cover and set aside in a warm place for at least half an hour to allow the dough to rise nicely.

Once the dough has risen, shape it into small loaves/rolls and fry them gently in a pan with a little oil.

Gluten-free flour absorbs oil more easily, so don't add too much so that the pancakes don't get too oily.

The result is beautifully fluffy gluten-free pancakes that you can serve with whatever you fancy. Particularly tasty are gluten-free pancakes with cheese, pancakes with fruit, cinnamon, chocolate and, of course, the children's favourite pancakes with jam.

Recipe for gluten-free pancakes without yeast

To prepare yeast-free pancakes, we will need the following ingredients:

  • 125 g gluten-free flour
  • 150 ml of milk
  • 1 egg
  • 1 tbsp butter
  • 2 tablespoons granulated sugar
  • 2 tablespoons oil
  • 1 packet of baking powder

When making pancakes without yeast, you do not have to undergo the process of rising the batter, so the whole workflow is simplified.

Put the granulated sugar in a bowl, add the eggs, butter and 150 ml of milk.
Mix the ingredients with a mixer and slowly add the oil to the batter, stirring constantly.

Then add the flour and baking powder and mix again. This will make a thicker batter. For this type of recipe, it is advisable to use a pan designed specifically for pancakes, which should be lightly coated with oil.

Fry the pancakes until they are a beautiful golden colour. They can again be served as you like - with fruit, jam, whipped cream, caramel... There really are no limits to the imagination.

Recipe for gluten-free, flour-free and lactose-free pancakes

Nowadays, more and more people are inclined towards a healthy diet. Terms like organic or raw are constantly bandied about. Even the gluten-free diet itself is already followed by many people quite voluntarily, because they simply want to live a healthy life.

So whether you suffer from celiac disease or not, the following recipe is for everyone.

These sweet fritters are incredibly easy and quick to make, costing you next to nothing to prepare, yet you can enjoy them with almost no regrets. You won't even use a grain of flour or sugar to make them.

You will only need two ingredients:

  • 1 ripe banana
  • 1 egg

Yes, that's it.

Peel the banana and mash it, for example, with a fork. Because a ripe banana is naturally sweet, you don't need to add any sugar at all.

Add the egg to the mashed banana and beat the mixture with a mixer or even by hand with a fork.

Heat a little oil in a frying pan and fry the bananas in it on both sides until golden brown. You can top the pancakes with maple or agave syrup or decorate them with fruit. You can also top the pancakes with white yoghurt or spread them with low-fat and lactose-free cottage cheese.
