In the following lines, we will present you with a simple and proven recipe that will help you cope with the challenge of gluten-free bábovka.

We offer you a cup recipe for a gluten-free variant. Simple, quick and tasty gluten-free cake, which can also be customized with coconut, nuts, cottage cheese. It can be eaten with cocoa, honey, jam, pudding, coffee.

As the name suggests, you won't need any measuring cups or a kitchen scale for this recipe.

Ingredients you will need:

  • 2 cups of gluten-free flour
  • 1 cup granulated sugar
  • about 0.5 cup of oil
  • 1 cup of milk
  • 2 eggs
  • vanilla sugar
  • 1 baking powder
  • 2 tablespoons cocoa powder

For gluten-free recipes, it's important to make sure all ingredients are at room temperature!

The procedure is very simple.

Whisk the whole eggs and sugar together until foamy. Pour in the milk, add the flour, baking powder, vanilla sugar and whisk everything together thoroughly.

Pour 3/4 of the batter into the prepared mould. Butter the mould beforehand and sprinkle lightly with flour or coconut.

Stir the cocoa into the remaining 1/4 of the batter and pour the resulting dark batter into the mould alongside the light batter in such a way as to create the typical marble effect.

Place in an oven preheated to 180 degrees for about 30 min.

Make sure not to open the oven for the first 15-20 mins, otherwise the dough may crack.

To check if the bundt is cooked enough, insert a toothpick into the centre of the dough. If it is dry when you pull it out, the bundt is cooked. If the dough sticks to the toothpick, continue baking. However, keep an eye on the time and temperature so that the bundt doesn't burn.

This recipe is very simple and can also be used to make other flavours of bundt cake. Adding ground nuts to the batter will make a nutty bundt cake, while adding coconut to the batter will make a coconut bundt cake. You can add these ingredients to the batter, but also as a crumb to the bundt cake itself, which will enhance the flavour even more.
