Zucchini pancakes baked in the oven are a fit delicacy. Together with carrots, potatoes, onions and garlic, you will conjure up a healthy and tasty meal on a baking sheet.

Zucchini is sought after not only for its delicate and easy-to-combine taste, but especially for its health benefits.

Zucchini is a popular ingredient especially for slimming diets, as it is low in calories and high in water, carotenes and minerals. It improves digestion, lowers cholesterol and flushes out salt and excess water.

Ingredients

For delicious zucchini pancakes you will need:

  • 1 medium zucchini (about 400 g)
  • 1 carrot
  • 4 potatoes
  • 3 cloves of garlic
  • 1 small onion
  • 4 tablespoons oatmeal
  • 1 egg
  • a pinch of salt, pepper, cumin and marjoram
  • a few drops of olive oil

How to prepare the dish

Our pancakes are baked in the oven. Such pancakes are not greasy and are therefore more dietary. For an even healthier version, we used oatmeal instead of flour.

How to make it:

Wash the zucchini, remove the skin and grate it on a fine grater. Leave it on a sieve for a few minutes to get rid of excess water.

Clean and grate the carrots, potatoes and garlic. Chop the onion finely.

Don't be afraid to add vegetables such as carrots, garlic or onions to the pancakes. Onions contain many antioxidants, pyridoxine or folic acid. They protect against various diseases and are also good for our heart and blood vessels.

Add the oatmeal and egg and mix everything together. Season with salt, pepper, a pinch of cumin and marjoram.

If the mixture still seems thin, add more oatmeal.

Oatmeal helps lower cholesterol, blood sugar and insulin levels. It also lowers blood pressure and improves immunity. Some experts say we should eat at least 4 tablespoons of oatmeal a day.

Preheat the oven to 200 °C. Prepare a baking tray and spread baking paper on it. Spoon the mixture onto it and mash it into a pancake shape.

Drizzle with olive oil and bake until golden brown, about 20 to 30 minutes.
