Recipe for healthy blueberry muffins

You can use fresh blueberries, blueberry compote or blueberry jam as a filling. All variants are delicious. It depends on you and what kind of blueberries you have.

For blueberry muffins you will need:

  • 2 cups spelt whole wheat flour
  • 1 cup cane sugar
  • 1 cup baking powder
  • 1 cup milk
  • 1 whole egg
  • 1 banana
  • 250 g soft cottage cheese
  • 1 cup blueberries or blueberry jam
  • 1 teaspoon cocoa

Also prepare the paper muffin cups before baking. If you have forgotten them, simply grease a muffin tin with butter and dust with coarse flour.

Even without a baking tray, you can manage. Use a bundt tin or a so-called deer back instead. These must of course also be buttered and floured. Remember that in such a tin the dough will take a little longer to bake.

How to do it:

First, put all the dry ingredients in a bowl. That is, 2 cups of flour, 1 cup of sugar and baking powder.

Then add 1 cup of milk, an egg, cottage cheese and a banana mashed with a fork. This will give the batter an interesting flavor. Mix all the ingredients well.

Bananas are very popular because they are rich in vitamins such as B, C, E, and K. They also contain fibre, minerals and other beneficial substances.

This makes them beneficial for heart disease, diarrhea and anemia. They lower cholesterol and are also very popular with athletes for their energy value.

If you have fresh blueberries, simply add them to the batter. Leave them whole, do not squash them. This way they will be a tasty addition and surprise in the finished muffins.

Don't forget to defrost frozen blueberries in plenty of time and let them dry out from excess water.

If you have blueberry jam, fill the cupcakes about halfway with the mixed batter. Place the tin with the cupcakes and batter in the oven, preheated to 180 °C, for about 5 to 7 minutes.

Remove the muffins and spoon a teaspoon of blueberry jam into each one.

Wipe the remaining batter with a teaspoon of cocoa and pour into the cupcakes. Then put them back in the oven and bake for about 20 to 30 minutes more.

This makes beautiful two-tone muffins with blueberry filling. Just let them cool and enjoy this healthy summer treat.

A skewer is a great tool for baking. You can use it to prick the dough to see if it is cooked properly. If the dough sticks to the skewer when you pull it out, it means that the dough still needs to be in the oven. However, if the skewer is clean when you prick it and take it out, the dough is cooked properly.
