Thanks to the cottage cheese, your bundt cake will be rich in calcium, which is important for bones, muscles and teeth. It is very digestible and also contains many minerals and vitamins.

Almonds contain almond oil, vitamins of group B, E and A. They also contain calcium, magnesium and potassium. Their values are higher than in other nuts. Therefore, they are rightly considered the healthiest.

Cheesecake with almonds and orange juice

This unconventional recipe has an interesting combination of flavours that you can adapt and fine-tune yourself. In addition to the ingredients listed, you will also need a bundt tin. This will give the bundt tin the classic and familiar bundt shape.

You will need:

  • 150 g butter
  • 4 eggs
  • vanilla sugar
  • juice of two oranges
  • 150 g wholemeal spelt flour
  • baking powder
  • 100 g ground almonds
  • 250 g cottage cheese
  • 150 g cane sugar
  • 1 tablespoon cocoa
  • butter and coarse flour to grease and dust the tin

How to make it:

Leave the butter to soften at room temperature. Separate the egg yolks from the egg whites. Finely grind the almonds and juice the oranges.

Grease a bundt tin with butter and dust with flour to prevent the dough from sticking. Preheat the oven to 180 °C.

Using a whisk with beaters, beat the butter with the egg yolks, vanilla and cane sugar.

Gradually add the orange juice, flour with baking powder, ground almonds and cottage cheese.

Beat the egg whites into a stiff snow and fold into the prepared batter with a whisk.

However, keep about a third of the batter in the bowl and mix it with a little cocoa.

You can sift the cocoa through a small sieve first. Pour the batter thus coloured into the mould, with the rest of the batter.

Cocoa promotes the release of endorphins, which are the so-called "happy hormones". Among many other beneficial substances, it also contains flavonoids, which are plant compounds with beneficial effects on the body. They act as antioxidants, reduce inflammation or protect the body from harmful microbes.

Place the cake in the oven and bake for about 60 to 75 minutes.

Stick a skewer into the dough to see if the cake is cooked through. If the dough is not stuck to the skewer when you pull it out, you can remove the cake from the oven.

It will be easier to remove the cake from the tin once it has cooled. In the meantime, you can prepare a tray or plate to tip the cake onto.

You can sprinkle the finished cake with icing sugar or drizzle with lemon glaze.

Recipe for lemon glaze

Lemon or orange glaze flavours and decorates especially fresh fruit cakes and tarts.

For the glaze you will need:

  • 70 g icing sugar
  • juice of one lemon or orange

How to make it:

Pour the juice into a small saucepan and heat it slowly. Add the sugar to the warm juice and stir until completely dissolved.

Pour the glaze over the bundt cake or other dessert while still warm, creating a sweet and glossy finish.

You can also use mandarin marigold marigolds or sprinkle with grated almonds for decoration. It's up to your taste and imagination.
