Tasty and healthy pancakes? Our recipe from oatmeal and coconut

Children especially love oatmeal, but adults should also enjoy it for its properties and nutritional value.

Oatmeal contains so-called slow, low-glycaemic carbohydrates. Such sugars are excreted slowly into the blood. They are therefore an excellent source of energy.

The sugar contained in oatmeal is directly usable by the body and is not stored.

They are a good source of vegetable fibre. They support digestion and metabolism.

Oatmeal causes a longer feeling of satiety, reduces the absorption of fats and cholesterol. It is therefore beneficial for people suffering from diabetes, elevated cholesterol and obesity.

They also contain:

  • Calcium
  • magnesium
  • potassium
  • B vitamins
  • vitamin K
  • vitamin E

They also contain vegetable proteins that support muscle mass.

Recipe for oat pancakes with coconut

Oatmeal is especially recommended for breakfast because of its properties and energy value. Pancakes prepared in this way will give you the necessary energy for a longer period of time.

You will need

  • 150 g oatmeal
  • 2 eggs
  • 300 ml milk
  • a pinch of salt
  • 1 tablespoon cane sugar or honey
  • coconut oil

How to make it

Grind or blend the flakes finely. Add the milk, eggs, coconut, a pinch of salt and sugar.

For an even healthier version of the recipe, use only the egg whites. This will be welcomed by patients with gallbladder problems, for example.

Let the dough rest in the refrigerator for about 20 minutes.

The mixture will still thicken as the flakes swell, so top up with milk as needed to ensure the batter is not too thick or runny.

Pour about a tablespoon of coconut oil into the pan and spread it all over the pan. When the oil is hot, you can pour the batter into the pan for the first pancake.

You can make classic thin pancakes or thicker pancakes. The choice is yours.

Fry the pancake on each side. Repeat the process until all the batter is used.

Finished pancakes are perfect to combine with banana and jam, maple syrup, cinnamon, raisins and nuts.
