We will prepare a cake suitable for coeliacs, so it will not contain gluten. However, it can also be prepared with special cottage cheese or cottage cheese for lactose intolerant people.

Cottage cheese is the basis of our cake. It is full of great vitamins and minerals beneficial for our health.

As everyone knows, it is a great source of calcium. Calcium is beneficial for our teeth, bones and even ligaments. It helps fight osteoporosis. It is also great for treating and preventing cancer because it strengthens intercellular communication.

The vitamins and minerals found in cottage cheese also ensure youthful looking skin. The vitamins found in cottage cheese include B6, B12, A, C, D, E and omega-3 and omega-6 unsaturated fatty acids. It also contains thiamine, magnesium, riboflavin, folic acid and beta-carotene.

Ingredients

For a fit cheesecake we need the following foods. Alternatively, you can combine them according to your own taste and creativity.

  • 3 tablespoons of protein powder with cocoa or chocolate flavour
  • 4 tablespoons of coconut sugar
  • 1 teaspoon baking powder or baking soda
  • 1.5 cups gluten-free plain flour
  • Eggs
  • 0.5 cup coconut oil
  • 1 cup coconut or soy milk
  • pinch of salt

Filling

  • honey or vanilla sugar
  • 300 g soft cottage cheese
  • 250 g lumpy cottage cheese
  • 3 eggs
  • you can also add a spoonful of vanilla flavoured powder
  • fruit such as cherries, raspberries or strawberries

How to prepare the cake?

1. First mix the dry ingredients and separately the wet ingredients. So mix the flour, cocoa powder, baking powder and sugar. Then mix separately the eggs, the melted oil and some of the milk.

2. Finally, knead everything together until it forms a thick dough without lumps. When it is noticeable that it is thin, add the milk. However, if it is too thin, add the flour.

3. Divide the prepared dough into two equal lumps and leave wrapped in the fridge to rest.

4. While the dough is rising, prepare the curd filling. The filling is best prepared by beating the egg whites and egg yolks separately with the sugar, then the curd. The egg yolks are then folded into both curds, the egg whites and finally the beaten egg white snow is lightly folded in.

5. Finally, take the dough out of the fridge and grate it evenly onto a greased baking sheet (it's best to buy baking spray). Use a coarse grater.

6. Layer the cheesecake filling on half of the grated dough.

Here you can add the cooked fruit. Prepare this by chopping it finely and boiling it in a little water with a little coconut sugar.

7. Then grate the rest of the pastry over the curd filling.

8. Bake the cake at 180 degrees Celsius for about 35 minutes.

The pie can be prepared in many ways, you can also add bananas to the batter and use almond butter instead of coconut oil. It's up to your creativity and courage to experiment.
