Leek soup is good for our body. Try our simple recipe

Leeks are a very healthy vegetable. They have many great effects on our health. This is especially true for recipes made from fresh leeks, but cooked leeks also have their beneficial effects.

Leeks are in the same group as onions and garlic. They also look like a sort of large spring onion and are layered in the same way.

There are many recipes in which leeks play a major role. They are used in spreads, sauces, soups and broths.

It is a fairly large stick, which usually has a white onion at the bottom. However, it is cylindrically connected to the leaves, which are already green in colour.

Almost the whole leek can be used in the kitchen. Leaves up to the end are not recommended for use, so they are cut off and composted or thrown away. Some green leaves, however, are suitable for processing.

It is made up of many vitamins and minerals that have a beneficial effect on our health.

Among the minerals in leeks, we find a large amount of flavonoids, phosphorus, manganese, selenium, calcium, iron and, among other substances, omega-3 fatty acids, folic acid, carotenes, fibre and antioxidants.

It also contains B, A, C, E and K vitamins.

In the past, but even today, it was often used in home medicine.

The ancient Romans and Greeks favored leeks as the greatest helper after a sleepless night of alcohol. They are said to help cure "hangovers".

In fact, it helps to cure coughs, boosts immunity in general, and serves as a protection against infections thanks to antioxidants and folic acid.

Ladies will enjoy its beneficial effect on hair growth and beauty, which is mainly due to its iron, manganese and vitamin C content.

The broth is also used for constipation and flatulence, as its composition has a beneficial effect on digestion and the proper functioning of the intestines.

It helps the kidneys to function properly, thereby supporting the body in getting rid of excess water. It helps the intestines to get rid of bacteria and yeasts.

The composition of leeks also helps in the prevention of thrombosis and varicose veins and as an aid in rheumatism.

It is very useful in diet, especially due to its fibre content, which is satiating.

Raw materials

  • 2 medium-sized leeks
  • 4 spring onions
  • 3 cloves of garlic
  • 1 piece of celery
  • 250 ml coconut milk
  • olive oil
  • vegetable broth
  • black ground pepper
  • basil
  • salt
  • parsley

Recipe for healthy leek soup

1. Clean and wash all the vegetables thoroughly. Cut the leeks, onion and celery into thin slices.

2. Set aside part of the leek from the centre, where the onion turns into green leaves. Fry the rest of the onion in olive oil.

3. Add the diced celery and the crushed garlic. Fry and pour in the stock.

4. Season with salt and pepper. Cook for about half an hour until the celery is completely soft.

5. Blend the soup thoroughly with an immersion blender and bring to the boil again.

6. Add the rest of the thinly sliced leeks, some of the chopped parsley and the coconut milk or cream.

7. The soup is ready when the leek rounds are soft. They may still be a little crispy.

For example, we like ours rather harder, just a little softened.

8. Serve the leek soup with garlic toast sprinkled with a little parsley.
