Recipe for blueberry bubblana

This recipe is perfect for the summertime. Blueberry season is in full swing. Plus, no one wants to spend unnecessarily long hours in the kitchen. With this simple recipe, you can quickly bake a healthier, but just as tasty, bubble cake.

You will need:

  • 2 cups of spelt flour
  • 1 cup cane sugar
  • 1 cup ground almonds
  • 1 cup baking powder
  • 1 cup milk
  • 2 eggs
  • 250 g of soft cottage cheese
  • 2 tablespoons honey
  • 1-2 cups blueberries

How to make it:

First, prepare the almonds. Grind them and put a cup of such almonds in a bowl. Then add the other dry ingredients, i.e. 2 cups of flour, 1 cup of sugar and baking powder.

Mix everything gently and then add 1 cup of milk, 2 whole eggs, 250 g of soft curd and 2 tablespoons of honey.

Cottage cheese is one of the so-called fresh, unripened cheeses. It is very digestible and contains beneficial substances such as minerals and vitamins. It is particularly rich in calcium, which is needed for bones, muscles and teeth.

Mix the ingredients thoroughly. You can also use a whisk. The ingredients must be well combined and the dough should be smooth.

Pour the mixed dough onto a small baking tray lined with baking paper. If you do not have baking paper, simply use butter and coarse flour. Butter the tray first and then dust it with flour.

Sprinkle the fresh blueberries evenly over the dough.

You can also use frozen or preserved blueberries. However, be sure to thaw them in time and let them drain from excess water on a sieve.

Preheat the oven to 180 °C and bake the bubble for about 30 minutes.

You can tell if the bubble is cooked properly by inserting a skewer into the centre of the bubble. If the dough is still stuck to the skewer when you pull it out, put the bubble back in the oven. It still needs some time to cook.

If the skewer is clean, let the bubble cool and you can eat.
