Ingredients for gluten-free pasta
Gluten-free pasta is usually made with a base of cornflour and cornstarch with the addition of egg white (may or may not be present) and natural colours - such as turmeric.
The composition of corn pasta predisposes it to its characteristic deep yellow colour.
Corn as an ingredient may be present in the product in different proportions - either 100 % or in combination with rice, buckwheat or other flour (made from gluten-free ingredients).
There are also exclusively buckwheat gluten-free pasta (which has a characteristic nutty colour) and exclusively rice gluten-free pasta (also called glass pasta because it is almost transparent and very fine).
Rice pasta is mainly found in the form of rice noodles and is an essential part of Chinese, Thai and Indian cuisine.
Where can I buy gluten-free pasta?
Gluten-free pasta in semi-finished form is fortunately almost no longer a problem. You can buy it in every health food store, but also in almost every major supermarket.
Recipe for delicious homemade gluten-free pasta
To prepare gluten-free pasta we will need the following ingredients:
- 250 g gluten-free flour
- 3 eggs
- 3 tablespoons of water
- 3 tbsp olive oil
- a pinch of salt
The procedure is simple. First, whisk the eggs with 3 tablespoons of water. In another bowl, mix the flour with the salt and then add the whisked eggs.
Finally, pour the oil into the mixture.
Mix everything thoroughly and make a smooth dough. Let the finished gluten-free dough rest for about 15 minutes.
After resting, roll out the dough and cut out thin strips. You can cut out the dough either by hand or with a noodle cutter. Of course, you can also cut out shapes other than strips/noodles, it just depends on your skill and dexterity.
Once you have cut out the dough, dip it into a pot of boiling salted water. To prevent the pasta from sticking, add a few drops of oil to the pot as well.
Cook the pasta for just a few minutes until it floats to the surface.
Once this is done, carefully remove the pasta and serve (as a main dish, side dish or in soup).
