What do you need to prepare gluten and lactose free cheesecake?

Ingredients:

  • Oat flakes
  • almond meal
  • honey
  • coconut oil
  • 200 g lactose-free cottage cheese (you can also use 180 g or 250 g)
  • 200 g lactose-free ricotta
  • 250 g vegan mascarpone
  • vanilla extract
  • seasonal fruit from the garden or to taste

Recipe

1. Grind the oats finely and mix with the almond meal, honey and melted coconut oil to make a thick batter.

2. Spread the batter in an even layer on the bottom of the cake tin. You can freeze the cake in the freezer while you prepare the filling for better firmness.

Choose good quality oatmeal to make sure it is not contaminated with gluten.

3. Beat the soft cottage cheese with the ricotta, mascarpone, honey and vanilla extract.

If you're worried that the filling won't hold its shape, feel free to stir in the gelatin. It usually holds without it. However, it depends on the density of the cottage cheese and ricotta.

4. Pour the smooth and stiff cream onto the prepared frozen cake and refrigerate.

It is best to leave the cheesecake in the fridge overnight. This will ensure that it is properly set.

5. Before serving, you can decorate with fruit according to taste or season. It is delicious with sweet strawberries, raspberries or even less sweet blueberries and other berries.
