What do we need for a healthy version of roasted stuffed peppers?
- 4 white peppers
- 300 g ground turkey meat
- 150 g rice
- garlic
- onion
- cumin
- black pepper
- salt
Sauce
- new pepper
- bay leaf
- black pepper
- salt
- sugar
- 1 carrot
- 500 ml tomato puree
Recipe
- First, prepare the peppers. Wash the peppers and carefully cut out the stems and seeds.
- Mix the minced meat well with the salt, black pepper and ground cumin. Add the steamed rice, which can be prepared in water with salt or in a rice cooker as usual. Add the finely chopped fried onion with the crushed garlic to the mixture.
- Fill the prepared peppers with the mixed meat and rice mixture. Place the peppers thus filled in a baking dish lined with baking paper and bake covered at 185 degrees for approximately 45 minutes. At the end, open the baking dish and add about 5 to 10 more minutes of heat to 220 degrees Celsius if necessary.
- Prepare the sauce by frying the finely chopped onion in the oil and adding the finely chopped carrots.
- Sprinkle lightly with black pepper and salt and pour over the puree. You can also add a little water and the rest of the spices with sugar.
- Boil well, remove the bay leaf and allspice before the end, blend gently and boil again briefly. Season to taste with salt and sugar.
- Serve the peppers topped with the sauce.
They go well with healthy toast, homemade dumplings or boiled potatoes.
