What do we need for a healthy version of roasted stuffed peppers?
- 4 white peppers
- 350 g ground turkey meat
- 300 g mozzarella (2 pieces)
- 6 tomatoes
- 190 g tomato puree
- olive oil
- garlic
- white onion
- red onion
- cumin
- black pepper
- salt
- spices
- bay leaf
- sugar
- 1 carrot
- 1 pcs red peppers/sliced vegetables
Recipe
- First, prepare the peppers. Wash the peppers and carefully cut out the stems and seeds.
- Mix the minced meat well with the torn mozzarella, salt, black pepper and ground cumin. Add the finely chopped fried white onion and the crushed garlic to the mixture.
- Fill the prepared peppers with the well-mixed meat and spice mixture. Place the peppers thus filled in the prepared baking dish.
- To the peppers, add the cleaned and diced tomatoes, carrots, bell peppers, red onion and about 5 to 6 cloves of cleaned garlic.
- Pour in the purée mixed with olive oil, salt, sugar, black and allspice and bay leaf.
- Bake everything together in a covered dish at 185 degrees for about 45 minutes. Open the baking dish towards the end. If necessary, turn up the heat to about 215 degrees F. Bake for about 10 more minutes.
- Remove the peppers from the baking dish, as well as the large spices such as bay leaf and allspice, and blend the mixture thoroughly until smooth.
Serve with natural rice, boiled potatoes or just on their own.
If you like more exotic flavours, instead of the bay leaf and allspice, place fresh basil in a baking dish and then stir it into the sauce.
