For healthy vanilla rolls we need

  • 150 g coconut flour
  • 50 g rice flour
  • 75 g ground walnuts
  • 150 g organic vegetable butter
  • 3 tablespoons honey
  • 3 teaspoons lemon juice
  • vanilla pod

For sprinkling

  • icing sugar
  • vanilla sugar

Preparation procedure

1. Mix the coconut and rice flour with the nuts.

2. Gradually make a smooth dough with softened butter, honey, pod and lemon juice.

If dough is too sticky, add coconut flour or nuts. If dough is crumbly, add lemon juice or butter.

3. Let the kneaded dough stand for half to a full hour to combine the flavours. Wrap it in cling film.

4. Shape the dough into a roll. Use your hands to form individual, roughly equal rolls, or you can put them into moulds if you have them.

5. Place the rolls on a baking tray and bake in a preheated oven at 180 °C for about 10, but no more than 15 minutes.

6. While still hot, roll them in the sugar mixture and leave to cool.

Enjoy!
