Banana bread is a healthy option suitable for breakfast, dinner and a regular snack. Our recipe for gluten-free banana bread with dark chocolate chips.

The main ingredient of the recipe is, as the name suggests, bananas. They are full of water and carbohydrates that give our body energy.

An excellent feature of bananas is their low fat content.

Among minerals, they also contain potassium, magnesium, phosphorus, manganese copper, selenium, sodium, fibre, zinc and iron.

Vitamins are dominated by A, B2, B6, B9 and C, as well as E and K.

One of the interesting features of bananas is that they are harvested while still green and then left to ripen at a stable temperature. Another interesting feature of ripening is that there are several stages of ripeness. Within these stages, the sugar and starch content is also differentiated.

Bananas are a great help in the fight against stroke. The unripe ones help in the fight against cancer.

They are also among the basic helpers in grandmotherly recipes against diarrhoea or constipation, because they improve our digestion and soothe it when irritated.

The potassium they contain helps heart health and good blood pressure.

They are also popular with athletes, who find them helpful in relieving muscle cramps, pain and recovery.

Ingredients for banana bread with dark chocolate

  • 4 bananas
  • 2 eggs
  • 2 dcl coconut milk
  • 1/3 cup coconut oil
  • 1 cup coconut flour
  • 1 cup buckwheat flakes (or buckwheat groats - these are already ground)
  • 150 g good quality dark chocolate
  • vanilla extract
  • salt
  • baking soda
  • honey

Recipe

1. First, blend the flakes finely and separately blend or just mash the bananas with a fork.

You can blend the bananas with eggs and milk in a smoothie blender.

2. Add the bananas, milk, eggs, vanilla, honey and oil to the banana mixture. Mix well with all the dry ingredients such as oats, chopped chocolate, flour, a pinch of salt and an aligned teaspoon of baking soda.

It is best to mix the mixture with a whisk. It will be well combined and fluffy.

3. Grease a baking dish well and pour the mixture into it. The bread can be baked in any shape, from a loin of venison to a bun.

4. Bake at 170 degrees Celsius for approximately 50 to 65 minutes.

5. When the bread is well baked, allow it to cool slightly and serve.

The bread is suitable for people with nut allergies and celiacs. Of course, you can also add nuts, dried or fresh fruit. It will always have a different taste and aroma.
