Purple potatoes are a very unusual ingredient, not only because of their special colour, but above all because of their composition. Potatoes of this colour are an excellent source of antioxidants and in combination with bryndza are a great source of nutrients.

Bryndza soup with purple potatoes is a pretty special combination. No need to worry, it's just the special color of the potatoes.
However, it is a healthy combination with a delicious taste that is definitely worth trying.
The purple potatoes make the soup even smoother and creamier than we're used to. In fact, their flavor is milder and more buttery than that of white potatoes.
So what makes these potatoes special, apart from their specific purple colour? Their colour and composition are reminiscent of blueberries or pomegranates.
As we have already mentioned, they have a pleasant and light taste. However, the main advantage of these potatoes is their supply of antioxidants.
In addition to B6, they are full of other vitamins. They contain several times more vitamin C than conventional white potatoes. They are also an excellent source of fibre.
By eating purple potatoes in various forms, we strengthen our immune system. They help against inflammation in the body and the fibre they contain aids proper digestion.
They are also beneficial for the circulatory system, especially for the blood vessels and blood pressure.
Chlorogenic acid is also found in them, which helps in digestion, speeding up the body and also in adjusting blood pressure.
By their composition, they help to act as prevention of various diseases such as cancer, diabetes, cardiovascular diseases and various inflammations in the body.
When cooking, it is best to use them whole, as much of the vitamin C is found in the skin.

It is, of course, richest in sheep's milk, but cow's milk is also used.
It contains many vitamins such as A, D, E, K, minerals - phosphorus, magnesium, copper, calcium, zinc and iron.
In addition to vitamins and minerals, bryndza contains many micro-organisms, i.e. beneficial bacteria. These lactic bacteria in turn produce beneficial acids and substances, as well as probiotics.
These ensure good digestion for our bodies and help to strengthen overall immunity.
Overall, the composition of bryndza supports the prevention of cancer, vascular disease, thinning bones and diabetes.
What do we need for an exceptional purple potato demicat?
- 250 g of bryndza
- 4 large purple potatoes
- 1 large onion
- garlic clove
- vegetable stock
- 250 ml cream 30 %
- lard
- salt
- cumin
- bay leaf
- ground black pepper
- ground paprika
Recipe for an exceptional purple potato demi-glace
1. Clean the onion and chop it finely. Then fry it in the lard, add the crushed garlic and fry together briefly. After a while, dust with black pepper, paprika and salt and pour in about 1 litre of stock.
2. Add the chopped potatoes to the stock and cook them with the remaining spices until the potatoes are soft.
3. When the potatoes are cooked, remove them with a ladle and stir in the bryndza and cream. Then pour everything back in and mix well.
4. You can blend the soup, but before you do, remove the bay leaves. You can just mash it so that there are chunks of potato in it.
5. Simmer briefly and it is ready.
The soup can be served with fresh chives or parsley and toasted bread.
Because it does not contain flour, it is also suitable for coeliacs.
