Ingredients for healthy rice pudding with apples and cinnamon

  • 400 g round grain rice - we used white rice, but brown rice is also suitable
  • 800 dcl lactose-free milk (can be coconut or soya)
  • 4 to 6 apples
  • 2 eggs
  • coconut oil
  • cinnamon
  • honey or maple syrup

Preparation procedure

1. It is best to knead the rice a little and fry it in coconut or olive oil. After frying it for a while, pour the milk over it and cook, stirring occasionally.

2. While the rice is cooking, separate the egg whites and egg yolks.

3. Beat the egg yolks and a little honey until thick and add a little cinnamon. Beat the egg whites with a pinch of salt and add a little sugar after beating.

4. When the rice is cooked, divide it into two parts. Mix one part with the egg yolks and pour it into the prepared baking dish.

5. Smooth the rice with the eggs and place the apples on top.

You can grate or cut the apples into larger rectangles.

6. Pour the remaining rice over the apples and bake in a preheated oven at 190 °C. Bake for approximately 30 minutes.

In the case of brown rice, it is longer, which you will see as you prepare it.

7. Just before finishing baking, brush the top with beaten egg white. Leave in the oven until the surface caramelises and browns.

Before serving, you can sprinkle it with cinnamon or lightly blanched or even flambéed apples.
