Our healthy recipe for the famous ratatouille is easy and can be mastered even by beginner cooks. It is suitable for even the pickiest eaters. Celiacs, lactose intolerant people and vegans can enjoy it.

Ratatouille is in itself a very healthy dish. It contains only vegetables and is therefore easily digestible.

There are no eggs or cheese in our recipe, so it is suitable for allergy sufferers or vegans.

One of the ingredients in our recipe is zucchini. It is extremely rich in vitamins and minerals such as A, B, C, E, K, beta carotene, potassium, phosphorus, magnesium, iodine, lutein, manganese, copper, molybdenum, selenium, sodium, calcium, zinc and iron.

The rich content of these beneficial substances makes it a green miracle from our garden.

Thanks to vitamin A, it penetrates deep into the body and protects the whole organism.

Zucchini contains few calories. It has a good effect on digestion, which it relieves and helps to empty easily.

It also helps to maintain cholesterol levels and thus the health of the circulatory system or proper blood pressure.

Eating zucchini promotes the flushing of excess water and thus harmful substances from the body.

Aubergine is also included in our recipe. It contains almost no fat and is largely made up of water.

Did you know that it is related to potatoes and tomatoes?

Its light composition makes it suitable for reduction diets, but also for people with digestive problems. It also contains fibre.

It is also a very good food for brain or mental health. Aubergines have an enriching effect on brain cells, which protect against toxins and disease.

Paprika is also a part of ratatouille. It is not only a rich source of iron, but also contains vitamin C. This ensures the absorption of iron from the intestines.

Vitamin A along with vitamin C rejuvenates the body and gives the skin a fresh look.

Onions contain vitamins B1, B2 and C. They are also rich in folic acid and vitamin E.

Due to the content of folic acid and other beneficial substances, they also slow down the formation of wrinkles.

It helps to overcome the problems of varicose veins, blood circulation disorders and various other ailments.

Regular consumption of onions in various forms will help fight depression, insomnia or lack of appetite.

In the past, it was even believed that sliced onions under the bed of a sick person would relieve fever. To this day, the flu is fought with onion tea.

For the ratotouille we need the following ingredients

Ingredients:

  • 1 piece of zucchini
  • 1 eggplant
  • 1 medium onion
  • 2 large tomatoes
  • 2 pcs of peppers
  • 5 garlic cloves
  • 500 g peeled tomatoes
  • olive oil
  • thyme
  • oregano
  • salt
  • ground black pepper

Recipe

1. First, wash and clean the vegetables. Prepare the finely chopped onions.

2. Fry the finely chopped onions in olive oil for a while, then add 5 crushed garlic cloves, thyme leaves and oregano.

3. Add the peeled tomatoes, mix everything and let it simmer.

4. Cut the remaining vegetables into thin slices.

5. Pour the prepared tomato base into the bottom of the casserole dish and alternately layer the vegetables.

You can arrange the vegetables in a circle or in rows in a row.

6. Cover the baking dish so that the entire surface is covered. Then bake in a preheated oven at 175 °C for about 45 minutes.

For a better taste, you can pour a mixture of olive oil, water with one clove of garlic and oregano on top.
