Spinach gnocchi are interesting not only for their appearance, but also for their composition and their content of beneficial substances.

Not everyone will say yummy to the green balls with white sauce, but you should definitely not skip a single serving. This is a very nutritious dish.

As the name suggests, the main ingredient in this dish is spinach. It is a superfood and some like to call it the elixir of health.

It is rich in vitamins and beneficial substances such as A, B, C, E, K, omega-3 and omega-6 acids, protein, potassium, phosphorus, magnesium, iodine, manganese, copper, selenium, sodium, calcium, fibre, zinc and above all iron.

It also contains a significant amount of oxalic acid, which is why it is not recommended to consume more than two to three times a week. This can hinder the absorption of calcium.

The combination of nutrients in spinach is excellent for eye, bone, dental, nerve and brain health.

It contains antioxidant substances that protect the eyes from UV rays and cataracts.

These substances are also effective in preventing cancer, especially breast, bladder, prostate and ovarian, stomach, liver and lung cancer.

Acids and antioxidants also ensure brain and nerve health, especially during stress and strain. It is also, thanks to this, an aid in the prevention of Alzheimer's disease.

Thanks to vitamin K, which helps with blood clotting, it is also an aid in the fight against haemophilia. Overall, however, its consumption is beneficial for the heart and circulatory system and may protect against cardiovascular disease.

Spinach also contains a number of anti-inflammatory substances that protect the body. They reduce inflammation and heart pain, which is especially helpful in inflammatory diseases such as arthritis or gout.

It is recommended to be consumed by pregnant women for the proper development of the fetus. Also, mothers with children should include spinach in their diet, as young children gain strength from it for growth and healthy development.

It is also a good idea to include it in the diet during weight loss diets. It contains a minimum of calories but a lot of nutrients.

In the recipe we use rice flour, which is suitable for celiacs. It is also lighter and does not burden our digestion.

It also keeps cholesterol and blood pressure levels in the right level, thus protecting our circulatory system.

Ingredients needed to prepare healthy spinach gnocchi with bryndza

  • spinach puree
  • rice flour
  • 2 eggs
  • salt
  • white yoghurt
  • bryndza

Recipe

1. Mix the thawed spinach puree with the flour, salt and eggs. Add flour as needed to make a thick enough batter.

2. Meanwhile, prepare a pot with salted water and a little oil and bring to the boil. The water must be boiling properly, as this is the only way the gnocchi will cook well.

3. The finished dough must be thick enough to be thrown into the water. Drop some of the dough into the boiling water. You can use a gnocchi maker or a chopping board to prepare the gnocchi. Boil for a while until the gnocchi float to the surface. Then use a sieve to scoop them into a bowl. You can then cook another portion in the water.

4. In the meantime, you can prepare the bryndza with white yoghurt, which you mix together.

5. The prepared gnocchi can be mixed directly with the bryndza, or the sauce can be added when the gnocchi are served.
