Potatoes have a positive effect on our health. However, it also depends on how they are prepared. Potato chips or fries fried in litres of oil are obviously not good for our health.
However, the composition of potatoes is beneficial to health. They contain a lot of water, vitamins and minerals.
They contain a small amount of protein, which is very beneficial for the body. Among the vitamins, potatoes contain vitamins of the B group, C and provitamin A.
The beneficial effects of potatoes include supporting the immune system, thyroid function and digestion.
They are an excellent source of potassium. The phosphorus salts, organic acids and the medicinal allantoin are also beneficial.
Potassium helps the heart and muscles. It is useful in regulating the amount of water in the body and helps in the digestion of carbohydrates.
Allantoin is regenerative. It promotes healing, especially of the skin, mucous membranes and tissue repair.
Potatoes are also used in home treatments as a poultice for eczema, burns and cuts. They are also used raw in juice form for stomach inflammations and ulcers.
The advantage of potatoes as a raw material in cooking is their ability to satiate for a long time.

Procedure for preparing healthy potato pancakes
1. First, preheat the oven to 190 degrees Celsius.
2. Peel the potatoes, onion and garlic in one way.
3. Wash everything properly and you can grate it. Grate the potatoes and onion into small slices and also press the garlic into the mixture.
4. Add the eggs and add cumin, marjoram and salt to taste.
5. Depending on the wateriness of the potatoes, add flour until you get a reasonably thick mass that holds together.
The dough should not be too thin or too thick.
6. Prepare the baking paper for the baking tray. If it is not greased enough, you can brush it with a light layer of olive oil.
7. Place the dough on the baking sheet and shape it into patties.
8. Place them in the oven and bake for approximately 20 minutes. You may or may not turn them.
The patties are golden and crispy on the outside and soft in the middle. They are good with Greek salad or just yogurt sauce or tsatziki.
Thanks to the buckwheat flour, they are also suitable for people with gluten intolerance or allergy.
