It is therefore essential that all ingredients are always at room temperature and, of course, that they are gluten-free. And not only the ingredients, but also the kitchen utensils you will be working with, as there is a risk of gluten contamination!
Recipe for tasty gluten-free pancakes
To prepare gluten-free pancakes we will need:
- 200 g of gluten-free flour or gluten-free buckwheat or coconut flour
- 2 eggs
- 3 dcl milk
- 1 tablespoon of semolina sugar
- 1 packet of vanilla sugar
- 1 dcl oil
- 1 dcl water
- 1 dcl mineral water
- pinch of salt
The procedure is very simple. First, beat the eggs with the icing sugar and vanilla sugar until foamy.
Once foamy, gradually add the flour, milk, water, oil and finally the mineral water. Beat everything thoroughly with a hand whisk and then leave to stand for about 15 minutes.
Brush the pan lightly with oil and fry traditionally on both sides.
The result is delicious gluten-free pancakes.
These can be filled with anything you like - cottage cheese, jam, sprinkled with raisins, cocoa or fruit, or decorated with whipped cream.
Recipe for gluten-free pancakes without milk - lactose-free
Unfortunately, many celiacs are also lactose intolerant.
The following recipe for gluten-free amaranth pancakes is just for them. The recipe does not contain milk or eggs, so the result is delicious gluten-free pancakes without eggs and milk.
The basis of the recipe is gluten-free flour and amaranth flour, which is commonly available today in supermarkets or various organic stores.
What is amaranth?
Amaranth is a cereal from South America that is extremely rich in protein, essential acids, vitamins and minerals.
Due to its high nutritional value, it is one of the most nutritious cereals in the world. Amaranth grains are similar in size to poppies, but have a whitish colour and a distinctive taste.
When cooked, it has a rich nutty flavour.
To prepare gluten, egg and dairy free amaranth pancakes, we will need the following ingredients:
- 80 g of gluten-free flour
- 120 g amaranth flour
- 400 ml of water
- 2 tablespoons granulated sugar
- a pinch of salt
The procedure is again very simple.
Whisk all the ingredients together to make a thin, fluffy pancake batter.
Let the batter rest for about 20 minutes. If it thickens, thin it with water.
Brush the pan lightly with oil and fry on both sides.
The pancakes will be brown when cooked and, as mentioned above, the amaranth will give them a specific nutty flavour.
The pancakes can be topped with any filling or topping.
