Our recipe contains healthy foods, is filling and we can eat as much as we want without regret. It will also please vegans and lactose intolerant people.

The main substitute for potatoes is celery. Potatoes are difficult for our digestion and it is not good to eat them in large quantities.

We also substitute it for mayonnaise, which is a calorie bomb containing oil and eggs, so it contains a lot of fat and cholesterol.

Celery is one of the most popular aphrodisiacs, but it also has many other benefits. It is also one of the favourite dietary ingredients.

Due to its varied composition, it is also very popular in home medicine.

It contains many vitamins such as B, C, A, E, K. It also contains a number of minerals, essential oil and also beneficial carotenes. Among the minerals, potassium, magnesium, chromium, sodium, calcium, zinc and iron are found in it.

Its composition is also disinfectant, antibacterial or antifungal. It is particularly beneficial for the digestion, which is not overloaded and is also cleansed and relieved.

To prepare a healthy Christmas celery salad we need

  • 1-2 pieces of celery
  • 300 g chickpeas
  • 2 carrots
  • 1,5 dcl peas
  • 1 pcs onion
  • 4-6 pcs of pickled cucumbers (depending on size and taste)
  • 250 ml white vegan coconut yoghurt
  • 250 ml vegan mayonnaise
  • 1-2 tsp mustard
  • salt
  • black pepper

Recipe preparation procedure

1. Peel the well-washed celery and cook together with the cleaned and washed carrots and chickpeas.

You can also use a sterilized carrot and pea mixture from the store.

2. Meanwhile, clean the onions and chop them finely with the cucumbers.

3. Cut the celery and carrots into small cubes when cooked.

The celery can also be grated on a larger grater.

4. Mix everything together, season with salt and pepper. If the vegetable mixture is too dry, you can add a little cucumber brine.

5. The mixture should stand for at least 2-3 hours, it is best to let it stand overnight.

6. Prepare a dressing of yoghurt, sour cream and mustard.

7. Mix everything together and serve.
