Coconut is full of vitamins C, E and minerals such as phosphorus, potassium, magnesium, calcium, zinc, iron. It has beneficial effects from outside and inside our body. Due to its composition, it works to improve mood, counteract depression and stress.

It can also be used as an aid to improve memory, digestion and fatigue.

The substances in coconut can help with inflammation, poor nutrient absorption or even irritable bowel syndrome.

It is also known for its antioxidant effects that protect the body.

Carrots are known for their carotene content, which helps improve our eyesight.

It contains vitamins such as A, C, D, E, K and B vitamins as well as sugars and essential oil. It contains many minerals such as magnesium, phosphorus, calcium, silicon, sulphur and iron.

It is an aid to the body in building resistance to infection. In addition to treating urinary stones, it is also effective in treating urinary stones and rheumatic arthritis.

It also improves memory and helps reduce the risk of cancer. It is very beneficial for digestion and even helps prevent weight gain and obesity.

Carrot juice is particularly popular, but grated fruits are also used in combination with other foods.

Bananas are excellent for the body. We even use them to replace eggs in our recipes.

Among minerals, they contain potassium, phosphorus, magnesium, manganese, selenium, sodium, calcium, zinc and iron. In addition to folic acid and pantothenic acid, they also contain vitamins A, C, E, K and some B vitamins.

Banana-almond cake

  • 4 bananas
  • 5 tablespoons fine almond flour
  • 4 tablespoons honey
  • 5 tablespoons applesauce
  • 1 tbsp good quality cocoa
  • 1 teaspoon baking powder
  • cream cheese
  • coconut oil
  • dark chocolate
  • decorations

How to prepare banana-almond cake pops

1. Mix the dry ingredients such as flour, cocoa powder and baking powder. Especially mix about 2 tablespoons of melted coconut oil, applesauce, honey and bananas.

2. Mix everything into a dough and pour onto a greased baking sheet.

3. Place the dough in an oven preheated to 180 degrees Celsius for about 15 minutes.

4. Once baked and cooled, crumble the dough and add the coconut oil and cream cheese until it forms a mass.

5. Shape the mixture into balls. Once shaped, place them on the prepared cake pops and let them set or place them in the freezer for a few minutes.

6. Finally, dip the balls in chocolate and decorate with the prepared decorations.

Carrot-curd slices

  • 250 g soft cottage cheese
  • 250 g cream cheese
  • 4 medium carrots
  • 5 bananas
  • 4 tablespoons honey
  • 1 teaspoon lemon or orange zest
  • 1 teaspoon vanilla extract

How to prepare carrot-curd slices

1. First mash the bananas with the vanilla extract, honey and citrus zest.

2. Stir in the cottage cheese and cream cheese.

3. Now we can wash and peel the carrots, which we grate finely and add to the mixture.

When the carrots have released their juice, squeeze them a little, but only gently.

4. Mix the mixture and put it on a greased baking sheet.

5. Bake the dough for about 35 minutes at 165 degrees Celsius.

6. After baking, serve drizzled with a mixture of citrus juice and honey.

Poppy seed-coconut raw balls

Difficulty: medium Preparation: 25 minutes + time to set in the fridge Servings: approximately 20 servings

  • 1 cup ground poppy seeds
  • 1/2 cup shredded coconut or ground walnuts
  • 3 tablespoons cranberry or plum jam
  • 3 tablespoons honey

How to prepare poppy seed-coconut balls

1. First, prepare the cranberries. Soak them in hot water for a while and then grind them preferably. For those who have less time, a variant with plum jam will be preferable.

If you like a more sour taste, cherry jam is also great.

2. Mix the ground poppy seeds with coconut or ground nuts.

For those who like it spicy, you can also use a little rum. In this variation, use more dry ingredients to help the dough come together well.

3. Gradually stir in honey and ground cranberries or one of the jams. Knead into a thick mass and shape into balls.

4. Roll the balls in the coconut and leave to set in the fridge.

5. Creative cooks can prepare balls in all variations: from plum and cherry jam and from cranberries.

6. Serve in decorative pastry cups.

Healthy vanilla rolls

  • 1.5 cup spelt flour
  • 3/4 cup ground walnuts
  • 4 tablespoons honey
  • 4 tablespoons coconut oil
  • 2 tablespoons lemon juice
  • 1 vanilla pod

How to make vanilla rolls

1. Mix the nuts and flour. Gradually add the honey, coconut oil, lemon juice and vanilla pod.

Carefully cut the vanilla pod lengthwise and remove the inside with a knife.

2. Shape the kneaded dough into rolls and leave them to rest for a few hours. It is best to have a pre-purchased roll mould to make the shaping easier.

3. Bake the prepared rolls in the moulds themselves or just on a baking tray, on baking paper.

4. Bake the rolls for about 10 minutes at 185 °C.

5. When the rolls are cooked until crisp, roll them in caster sugar with vanilla extract.
