Szeged goulash is a traditional Hungarian dish, but it is also prepared in Central Europe. Traditionally, it is a combination of pork, sauerkraut and cream. However, we will prepare a healthier version suitable for celiacs and those with milk and lactose allergies.

Typically, Szeged goulash is made with pork. However, it contains more fat than turkey. The turkey meat makes the goulash lighter and healthier.

It is a typical Hungarian dish, but it is also popular in other countries. The exact origin of the dish is unknown, but it is attributed to the Hungarians.

It is said to have originated by accident when the Hungarian writer József Székely arrived late at a restaurant and the cook prepared a dish for him using leftover goulash, sauerkraut and watered-down milk. The writer was charmed by the dish and it spread among the people.

So in our case, the base is turkey meat. We have changed it because it is lighter and, above all, contains less fat. It is therefore easier to digest and does not promote the build-up of cholesterol in the blood vessels.

The vitamins and minerals found in this meat include A, B3, B6, B12, folic acid, potassium, magnesium, phosphorus, sodium, calcium, zinc and iron.

Due to its light composition, it has a positive effect on anaemic disorders, bone thinning, anaemia, liver function and also on the nervous system.

Turkey meat consumption should be increased especially by women, for whom it is particularly valuable in terms of iron content, during menstruation. It also supports blood formation and the functioning of red blood cells. Menopausal women should definitely include this meat in their diet because of its higher calcium content, which helps against bone thinning during this period.

Men will also enjoy the zinc content, which has a beneficial effect on the immune system and potency.

Eating turkey meat is also good for promoting blood formation and the proper function of red blood cells. This is especially pleasing for women in the post-menstrual or menopausal period.

An equally important ingredient is, of course, sauerkraut. This is healthy in itself thanks to its high content of vitamins C and E and also contains vitamins of the B and K groups.

It is an excellent aid to digestion, especially thanks to its folic acid, fibre and pectin content. These not only aid digestion but also cleanse the body and rid it of harmful substances.

It also contains several beneficial minerals such as potassium, phosphorus, magnesium, calcium, zinc and iron.

It is an excellent source of bioactive substances or probiotics, which strengthen the intestinal microflora, cleanse digestion, support metabolism and keep it fit. It even contains lactobacilli.

Homemade sauerkraut is itself very healthy, especially in terms of its vitamin and mineral content. Combined with other healthy ingredients, it makes a health bomb.

It is also suitable for dieting, because thanks to its composition it helps to reduce fats in the body, helps to jump-start the body's microflora, for the functioning of metabolism and metabolism.

Ingredients

  • 500 g turkey breast
  • 500 g organic sauerkraut
  • 2 medium onions
  • 4 cloves of garlic
  • ground paprika
  • salt
  • black pepper
  • cumin
  • bay leaf
  • olive oil
  • coconut or soya cooking cream

How to prepare a healthy version of segedin?

1. Fry the finely chopped onion in a little olive oil until golden brown.

2. Add the cleaned diced meat and the spices. Simmer until the meat is tender.

Be careful with the salt on the meat, as cabbage tends to be salty. Taste it and try to judge the amount of salt accordingly.

3. When the meat is tender, add a little water, the cabbage, cumin and bay leaves. Boil again briefly. Braise to taste. If you prefer crispier cabbage, cook less. If you want the cabbage soft, cook more.

4. Before cooking, add the prepared cream. 18% soy cooking cream is better. It is not as strongly aromatic as coconut cream.

If you want the stew to be thicker, you can add some plain rice flour. The stew is usually served with dumplings, but it can also be served with gluten-free options, bread, boiled potatoes or celery pancakes.
