Oatmeal cake and no sugar?
Many of you are probably thinking that it can't taste good. I'll admit, I was thinking that too.
But this delicious chocolatey goodness is not only healthier than other cakes, it tastes great too.
Ingredients needed for chocolate cake
- 3 medium eggs
- 4 ripe bananas
- 150 g white yoghurt
- 50 g butter
- 180 g oat flakes
- 30 to 50 g cocoa
- 1 baking powder
- pinch of salt
- 200 g dark chocolate with high cocoa content
- 350 g cottage cheese or mascarpone
- fresh or frozen fruit
The best recipe for a healthy chocolate cake
Prepare the ingredients for the crust separately in two bowls. In a third bowl, whip the cream.
You will also need a food processor, a hand mixer, a smaller cake tin, baking paper, a fork (skewer) and a fine cocoa strainer.
- In the first bowl, mash the two bananas thoroughly.
- The riper the bananas, the sweeter the cake will be. You can even use overripe bananas with brown skin.
- To the bananas add the eggs, yoghurt and finally the lukewarm melted butter.
- Mix all the ingredients thoroughly with a hand mixer until smooth.
- In a second bowl, put the oatmeal, which you have previously ground to a fine meal.
- Add 30 to 40 g of cocoa to the oats (reserve the remaining cocoa for the crumble).
- Finally, add the baking powder and a pinch of salt.
- Gradually pour the contents of the second bowl into the first bowl with the bananas, stirring until a dough forms.
- Pour the batter into the prepared cake tin lined with baking paper.
- Place the cake tin in a preheated oven at 180 °C and bake for approximately 40 minutes.
- You can use a fork or skewer to check whether the pastry is well baked on the inside.
- Remove from the oven and set aside to cool.
Oatmeal cake has a thicker consistency than regular flour cake, so it is not advisable to make multiple tiers of cake.
If you want a taller cake, I recommend using almond flour instead of oatmeal.
- While the cake is cooling, prepare the filling.
- Melt the dark chocolate over steam.
- While the chocolate is melting, mash the remaining two bananas into a smooth paste, as you did for the crust.
- Mix the mashed bananas with the cottage cheese.
- Add the melted chocolate to the mixture and mix well with a mixer.
Mascarpone can be used instead of cottage cheese. It makes the cake more delicious, but you are missing out on the health benefits of cottage cheese.
Mascarpone should also be considered if you have a problem with a few extra pounds. In this case, cottage cheese is a better choice.
- Spread the prepared cream evenly over the cooled cake in about a 2 to 3cm layer.
- Place the crust and cream in the refrigerator for a couple of hours.
- After cooling for a few hours, remove the cake and sprinkle evenly with the remaining cocoa.
- Use fresh or even frozen fruit to decorate the cake.
- I use strawberries, but raspberries, blackberries or currants are also delicious.
- Grated chocolate can also be used as a decoration.
How is this cake healthier?
It is common to make cake shells with flour, add a lot of sugar and fill them with over-sweetened creams.
It is these ingredients that contribute to overweight, obesity and other health problems.
But is it possible to bake a cake without these basic pillars?
This is probably the question most of you are asking.
Yes, it is...
Flour replaced by oatmeal
Flour, flour and more flour...
Interesting:
In the past, flour was used in almost every household because it fed people quickly due to its high carbohydrate content.
It's important to remember that in the past people were leaner and did a lot of physical work, especially in the fields.
But the present is different.
Most people overeat and have nowhere to burn those calories because work is easier.
This is reflected in the development of fat pads and other health problems.
This hitherto irreplaceable raw material used for baking has a more rational substitute.
It is oatmeal.
Why is oatmeal one of the healthiest foods?
- they reduce blood sugar and cholesterol levels, thus eliminating the risk of cardiovascular disease
- they contain antioxidants and polyphenols, which help prevent vasculitis, myocardial infarction, stroke, high blood pressure and asthma
- antioxidants also protect us from free radicals
- fibre and beta-glucan ensure the proliferation of intestinal bacteria and facilitate digestion
- they are gluten-free, so they are also suitable for patients with coeliac disease
- they are carbohydrate-free compared to flour, so they are also suitable for diabetics
No added sugar!
The harmfulness of sugar has been talked about for a few years.
The name white killer has even become synonymous with it.
Despite its negatives, it is found almost everywhere and avoiding its consumption is really difficult.
It is even found in foods where no one would expect it.
Eliminating it completely from the diet is impossible, so let's at least cook without unnecessarily adding pure sugar.
