Christmas cabbage soup is the traditional soup of the Christmas table. Prepare it in our healthy version.

It also contains several beneficial minerals such as potassium, phosphorus, magnesium, calcium, zinc and iron.

It is also useful in dieting. Thanks to its composition, it helps to reduce fats in the body, helps to jumpstart the microflora of the body, for the functioning of metabolism and metabolism.

In home medicine, it was already used by our grandmothers to fight parasites such as hookworms or fleas.

To prepare a healthy Christmas cabbage soup we need

  • 1 kg sauerkraut
  • 1 large onion
  • 200 g fresh shiitake mushrooms
  • 150 g tomato puree
  • 180 g smoked tofu
  • 4 cloves of garlic
  • 3 l vegetable stock
  • olive oil
  • ground paprika
  • black pepper
  • bay leaf
  • ground cumin
  • cloves
  • salt

Preparation procedure

1. First clean and wash the onions and mushrooms. Finely chop the onions and thinly slice the mushrooms.

2. Fry the onions in olive oil only for a while, then add the mushrooms.

3. When everything has softened nicely, add paprika, salt, black pepper and cleaned and crushed garlic.

4. After a short while, add the cabbage, fry it together with the mixture and pour in the broth.

5. Stir well and add the rest of the spices. Add them to taste. Cover and cook slowly together.

6. When the cabbage is soft, add more puree to the soup for flavouring and tofu cut into smaller cubes.

7. Simmer everything together briefly over a low heat and you are done.

The soup does not contain anything of animal origin, so it will please even vegans. It is also suitable for lactose intolerant and celiacs.
