Ingredients for healthy sauerkraut

  • 500 g of good quality minced beef
  • 1 kg home-made sauerkraut
  • 250 g red rice
  • 2 onions
  • 2 cloves of garlic
  • olive oil
  • coconut cream
  • coconut milk
  • ground red pepper
  • black ground pepper
  • cumin
  • salt
  • turmeric

Preparation procedure

1. First, fry the cleaned and minced meat with finely chopped onions.

2. When the meat is the right brown colour, add black pepper, paprika, crushed cumin seeds and turmeric.

If the meat needs it, we can pour a little hot water over it and then salt it.

3. Cut the sauerkraut into smaller pieces and simmer in a little water with the cumin and paprika.

4. Cook the red rice in the same way as regular rice in 5 dcl of water. You can leave it to cook longer.

This rice will not be as soft as normal rice, so don't be alarmed.

5. You can mix the cooked rice with the meat, even with all its juices.

6. Finally, put everything into a greased baking dish. First a layer of cabbage, then the rice and meat mixture, and then the cabbage on top again.

7. You can top it with coconut cream whipped with salt and garlic. Then bake it together.

Depending on the juiciness of the rice and meat mixture, whether we add more milk to the cream. Everyone can indulge depending on whether they like it drier or properly juicy.

8. Bake the covered cabbage in a roasting tin at 185 °C for about 25 to 30 minutes. Then bake uncovered for another 5 to 10 minutes.

This healthy version of Koljozvár cabbage is tasty for everyone. It is also suitable for lactose intolerant people.
