What do we need?
- 200 g fresh baby spinach
- 1 medium sized kohlrabi
- 1 leek
- garlic
- ghee butter
- 250 ml coconut cream
Recipe for spinach soup
1. Briefly fry the chopped leeks in ghee butter. After a while, add a few crushed garlic cloves.
2. Add the spinach, which you can tear in advance.
3. After a short frying, add about half a litre of water.
4. Add black pepper, basil, salt and diced kohlrabi to the water.
5. Cook together for about half an hour and then blend well.
6. Simmer briefly and in the meantime add the coconut cream.
Serve with toasted sunflower seeds or also with lactose-free cottage cheese.
