Ingredients for chicken curry with coconut milk
- 400 g organic chicken breast
- 400 ml coconut milk
- 1 small onion
- 1 carrot
- 1 red pepper
- 3 spring onions
- 2 cloves of garlic
- ginger
- olive oil
- lime
- turmeric
- salt
- ground black pepper
- chilli
Recipe
1. Clean, wash, dry and cut the chicken breasts into strips. Clean, wash and cut the carrots and peppers into thicker slices.
2. Clean and finely chop the onion and fry in the oil until golden brown. Add the meat and the remaining vegetables and the crushed garlic.
3. Finally, add the spices, lime juice and a piece of grated ginger and pour in a little lukewarm water.
Add just enough water to the mixture to cover the meat about three-quarters of the way.
4. Cook together, stirring occasionally, until the meat is tender and done.
At this point it is a good idea to add the thinly sliced spring onions.
5. Finally, add the coconut milk and cook together briefly. You can add spices to taste if you wish.
Before finishing, you can add honey to the mixture to enhance its flavour.
